The CB&Q also had track pans.....or at least they had engines equipped with water scoops. Haven't run into any references to where they might have been located, but best guess would be some where west of Aurora on the line to Galesburg as the engines were used on the Fast Mail. Real water wouldn't be practical, but what you could do is model the track pan and rig up some sound effects tied to a sensor...
Does anyone know of an actual sound recording, from such an operation? That would be interesting. Perhaps something stashed on YouTube?
