I have noticed that there is a structure that is not available in any scale or kit. It is the "Little Chef" diner that was built by the Valentine Mfg Co of Kansas in the 40s-50s. It is a small streamlined pre-fab diner with a pylon sign that could easily be moved to a new site, and were seen on the open road, small towns, and corner sites in the big cities. There are two examples of this diner in Northern Ariz, in Winslow across from the train station, and at the Twin Arrows trading post ouside Flagstaff. The Valentine diner would be an ideal structure for a model RR, due to its small size and ability to be used in rural or urban settings.
City Classics and Walthers Cornerstone both make diners from that era. I'm sure there are others. I couldn't find anything that specifically matched the Valentine diner. I don't think it would be very hard to build one from sheet styrene, though. The lines are simple and square. This is the one in Winslow, Arizona:
